The best recipes are simple yet flavorful.
This recipe is all of that. It’s not fussy. An idiot could make it(not that anyone here’s an idiot). And it’s healthy, too. It may not be up to par with Royal Wedding standards(one more day! Eek!) but it’s a great choice for a week night in America when you get home late and just want something simple.
Simple Citrusy White Beans
Ingredients(Makes 2 servings):
- 1 can cannellini beans, drained
- 1 Tablespoon extra virgin olive oil
- 1 Tablespoons orange juice
- 1/2 teaspoon orange zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Drain and rinse the beans if you haven’t already.
In a bowl, toss all of the ingredients together. Serve at room temperature.
I told you this recipe was idiot-proof. The black pepper is key to the flavor; I don’t even normally like black pepper but it balances out the fruit flavors really nicely.
What makes a recipe a winner in your book?
Adding citrus zest is one of my favorite ways to add an interesting flavor to food.
For me, “winners” simply must fit into one equation:
Deliciousness > Effort/Time 🙂
I have nearly no food in my house at the moment, save for a few cans of beans and a couple lemons. Think I can make a quick substitution here and end up with dinner? Hope so!
I’m sure any citrus fruit would work great.
Looks delicious, and that first picture is beautiful! Dang, I just ate my orange yesterday, so this will have to wait. 🙁
I love a recipe that’s simple. If there are too many ingredients I usually pass it up.
I love simple dishes like this. Easy and satisfying!
Wow, this looks so good and relatively simple. So excited to try it next week!
This morning, after a meeting at Starbucks, I thought – “I could really go for one of Evan’s brownies.” I think Starbucks is now going to make me think of you (and brownies). I can’t decide if this is a bad or good situation 😉
Now I’m craving Starbucks, although I’m afraid of being blown away if I walk down the street.
Bravo for simple clean flavors! This looks like a wonderful summery use of cannelini (already one of my faves)…
Beans and orange–sounds yummy. I’ve been doing beans with lots of lemon and chard–made a three layer type thing recently…
Sounds great anyway (sorry, I wanted to write a nice comment and have to get outta here–good thoughts anyway)…
Looks gre-gre-great!! I love white beans and basically anything with acidity and/or citrus! This recipe is SO UP MY ALLEY! Love it:) Thanks!
mmm I love the addition of the citrus, so lovely 🙂
my favorite beans and I love citrus!

I never would have thought to pair citrus with beans. I LOVE IT!
