Banana Blondies With Chocolate Chips

Banana desserts have never been the most desirable; you always make them when your bananas are browned and dying as a last resort. I didn’t want that sort of recipe. I wanted the kind of recipe that makes you go out and buy bananas just to make it. And I think I’ve found that.

Banana Blondies With Chocolate Chips

Ingredients:

  • 1/2 cup butter, softened(or Earth Balance)
  • 1/2 cup light brown sugar
  • 1 cup(8 oz) mashed banana puree(about 2 large bananas)
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour

Let butter soften for about an hour before starting the recipe. Preheat your oven to 350 degrees. Cream together the butter and brown sugar. Next, add in the banana puree, chocolate chips, vanilla, and salt and mix together.

Lastly, add in the flour and mix until just incorporated. Spread the batter evenly in an 8×8 baking pan and bake for 40 minutes, or until the center has set and the edges are slightly browned.

I’ll admit that these were so easy I was a little worried how they’d come out. Could they rise? Hold their structure? They did. They were nice and soft and a little moist—perfect blondies. And the chocolate chips added just enough bitterness to contrast the salty/sweet base.

    I love this recipe!!! I actually just yesterday posted a huge post about what to do with those ripe bananas. It organized all my recipes for using bananas and I admit I would never buy bananas just to eat one. But I may let them go overripe just to make this 🙂

    Easy, vegan and GF. Perfect 🙂

    If it wasnt HWeen week, I’d be making your fudge. But we are already inundated with candy!

    I can’t say that I like white meat or dark meat better. It depends on the recipe for me. For instance, I love grilled BBQ chicken breasts (white meat) but I like shredded chicken thighs (dark meat) in my tacos!

    These look wonderful. My son is diabetic as well as has celiac. Do you have the nutritional value (especially carbohydrates) for these or can you recommend a cookbook that does?

      Hi, Deb. I plugged the ingredients into a nutrition website, nutritiondata.com, for the blondies without the frosting when cut into 9 servings and posted it here: http://www.thewannabechef.net/wp-content/uploads/2011/01/Untitled.png.
      It’s only a rough estimate because I couldn’t enter the ingredients exactly but I would guess that it’s pretty close.

    Do you think these could be made with coconut flour? And if so, what would the equivalent measurement be?

      I’ve only ever tried it with all-purpose gluten-free flour and I can’t really say how it’d turn out with coconut flour.

    MINES DIDN’T RISE PLUS IT WASN’T EVEN MOIST. IT WAS FLAT AND DIDN’T TASTE THAT GOOD. NEVER MAKING THIS AGAIN!

    I whipped these up using self-rising flour, just-ripe bananas and 1/2 cup op chopped up bitter chocolate and they turned out very nicely. Very moist, and great flavor. They didn’t rise very high, but that was okay. Nice recipe! Thanks for sharing it!
