I’m kind of a scatterbrain when it comes to making desserts; there are only a few recipes I can make without having to look at a recipe. Because of that, I usually end up making those same ones again and again like this fudge. It’s hard to forget 4 ingredients and how to use the microwave. You don’t even need to dirty any dishes. On top of that, it tastes just as good as any other fudge I’ve had. That’s probably why I keep making it again and again.
Microwave Chocolate Fudge
Ingredients(Makes 16 servings):
- 1 cup semi-sweet chocolate chips
- 1 4oz stick butter(coconut oil and Earth Balance work, too)
- 1/2 cup powdered sugar
- 1/4 cup milk(or non-dairy substitute)
Method:
- Melt together the chocolate chips and butter.
- Sift in the powdered sugar and pour in the milk. Mix until completely uniform.
- Pour the hot fudge into a 6 x 6 pan. Refrigerate until set.
- Cut into 1 1/2 inch squares and serve slightly chilled.
You had me at fudge. Mmmmm!!!

This is how I make my chocolate frosting. The ratios are never exact but it starts out with 1 c melted choc chips and then powdered sugar, splash of milk/cream, vanilla. Stir til the right consistency. You call it fudge, I call it frosting. All the same going down, right? 🙂
Okay…no more coming here. It’s just too easy to do this in the microwave – and I’m easily influenced.

what if i don’t have powdered sugar?!? can i use regular? (have you ever tried stevia or is that asking for trouble)
I used regular sugar once to make peanut butter fudge. The flavor was OK but the texture was… crunchy? I just wouldn’t recommend it. Apparently you can make your own powdered sugar by running regular sugar through a food processor.
ah ha! good to know. what if you run stevia thru a food processor? okay i’ll stop…

Yum! I love fudge, but I haaaaate thermometers, which you need with a lot of fudge recipes. I’m going to have to try this one out!
