In case you weren’t aware, it snowed in the North East on Wednesday. I’m just kidding; I’m aware that this is all the news stations talked about. I mean, they cancelled Days of Our Lives on Wednesday to talk about the weather for Christ’s sake. That means the storm was a big f*cking deal.
I don’t remember when snow in New England became front page news. It seems like when I was in Elementary school, it snowed, they cancelled school, and that was that. There weren’t any news stations coining “Snowmageddon” or “Snowpocalypse”. We simply stayed home and ate. And ate, and ate, and ate.
I had leftover coconut milk from something I made a few weeks ago(is it bad that I have no recollection of what this was?). I smelled it and it didn’t seem rotten, so I figured I’d better use it before I have to toss it. I made a 1/2 batch of my favorite cake recipe from the Sweet Utopia cookbook called “Chocolate Midnight Cake”. I love this because it’s rich, moist, and the perfect texture; you’d never guess this was vegan or gluten-free!
While those were baking I cleaned the dishes and watched the snowfall. I’d say we got at least 16 inches, probably more. I, for one, find that exciting. But I’m also the one who didn’t shovel at all and had nowhere to go on a Wednesday, so take my enthusiasm and think of it what you may.
And then the cupcakes came out perfectly! They need frosting, don’t they? There might be another storm this weekend, so I’ll save that for then.

And concerning the snow thing, I agree… I was traveling to NJ last Wednesday and had to cancel the plane tickets because of that dreaded storm…I miss snow! And being forced to stay inside of the house and eat because of snow.
And even when your cupcakes are bald they’re still gorgeous looking. Sorry for the long comment, but I had to say something for each point you made.

I was also super excited about this snow day. Mostly because I feel like these dang weathermen always let us down. They blow everything out of proportion these days, so half the time the “severe winter storm” is like 10 flurries and a bunch of rain. Thanks for the warning guys.
Annnyway…I think you made very good use of being snowed in. Those cupcakes look heavenly!! Even without the frosting.

that’s my issue with recipes that call for not a full can of anything, i.e. coconut milk, pumpkin puree, then i always have to make something else.

I’ve become immune to the snow. In the mountains, the kids don’t get snow days, the chains are on the buses for six months. But, they do get the occasional ski day!
Good, I’m not the only one one who thought the snowstorm news coverage was excessive. What’s a snow day if you can’t watch daytime tv and eat. I only got to eat. Yeah, and no DOOL really took the cake. Speaking of cake, these cupcakes look great.
Apparently it re-aired at 3:35am, because all Days fans have a horrible insomnia problem.
I love baking on snowdays/when the weather is bad. And these chocolate cakes look great!

The funny thing is that is snows like that all winter long here where I live. We don’t even have snow days because if we did, no one would ever finish school. But if we did have a snow day, I’d do exactly what you did!
