Organic Sweet Tea Vodka Lemonade

Organic Sweet Tea Vodka Lemonade

A new year brings new changes, right? I’m hoping in 2013 to share more drink recipes as I get comfortable trying to make them myself. When it comes to alcohol I’m not a big fan of gluten-free beer, cider, or wine, but I love hard liquor and mixed drinks which are just as fun to drink as they are to make.

One of the first mixed drinks I ordered was a sweet tea vodka lemonade. My roommate being from Texas always orders these and turned me on to them. They get a name for being a Summer drink given the flavors but these are delicious any time of the year.

I like to make the tea in advanced and refrigerate it for a day to get it extra cold. You can buy the lemonade or sweet tea on their own but the drink tastes noticeably fresher when you make it from scratch.

How To Dress Up Hot Chocolate

How To Dress Up Hot Chocolate

One of my favorite things about this time of year is the endless holiday parties. But that’s also one of the more stressful things about the holidays, too. When you have a different party to go to every night, it’s hard to think of something unique and delicious to bring that’s going to stand out. Hot chocolate is always a crowd pleaser but gets a little boring after the 4th or 5th time with just marshmallows to dress it up.

How To Dress Up Hot Chocolate Alcohol

Chocolate doesn’t have to go with just marshmallows. There are plenty of ways to flavor hot chocolate that go beyond vanilla. Whether you’re using milk or water, cocoa mix or from scratch, you can always infuse more flavor into the chocolate with one or two ingredients.

How To Dress Up Hot Chocolate

You’ll need:

  • Hot chocolate recipe or mix(preferably for 2 cups or more of hot chocolate)
  • Orange zest
  • Coconut milk
  • Spices: Cinnamon, Nutmeg
  • Baileys or Amaretto

How To Dress Up Hot Chocolate Orange

Orange Hot Chocolate:

One great flavor combination is orange and chocolate. Add about a 1/4 Tablespoon of orange zest for every 1/2 cup of hot chocolate you’re making to the boiling milk or water. Right before you serve the hot chocolate, strain it to get the orange solids out. The oils will stay and flavor the hot chocolate.

Orange-Coconut Hot Chocolate

For every 2 cup of water or milk you would use to make the hot chocolate, use 1/4 cup less. Use the same technique for orange hot chocolate but add 1/4 cup full-fat coconut milk after the hot chocolate is made.

How To Dress Up Hot Chocolate Brady's

Adult Hot Chocolate:

I feel like we all know how to make these. Just add a few splashes of Irish cream or amaretto into your hot chocolate and enjoy.

Cinnamon Hot Chocolate:

Another great way to make your hot chocolate is spicy. For every 2 cups of hot chocolate, add in 1/4 teaspoon of cinnamon and a pinch of nutmeg and mix them in well.

Gluten-Free Pumpkin Pancakes

gluten-free pumpkin pancakes

This recipe has been a long time coming. I bought a can of pumpkin at the start of November and it’s been sitting in my pantry unused since then. Finally when I realized I didn’t have anything to cook for dinner one night I remembered I had the ingredients for these pancakes and whipped some up.

They were so good I made them again the next morning and took pictures. My only regret is that I didn’t have chocolate chips at the time to mix into the batter.  Add some of those and you’d have perfection.

If you don’t have pumpkin pie spice just add a little bit of cinnamon and nutmeg to flavor these. You can also use almond extract in place of the vanilla extract for an interesting flavor.

Gluten-Free Pumpkin Pancakes

Prep time: 5 minutes

Cook time: 10 minutes

Ingredients(Makes 2 servings):

  • 1/2 cup + 2 Tablespoons chickpea flour
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 3 Tablespoons cane sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • ~1/2 cup water

Method:

  1. Heat a frying pan over a burner set to medium and grease it lightly.
  2. In a large bowl whisk together the chickpea flour, egg, pumpkin, sugar, pumpkin spice, baking soda, and vanilla.
  3. Slowly incorporate the water until the batter is somewhat runny and easy to pour. If the water doesn’t seem to be enough, slowly add more by the Tablespoon.
  4. Pour about 3 Tablespoons of batter into the pan. Flip when the pancake is bubbly and the sides have set to cook the other side. Make sure to cook long enough so that it’s cooked through the center.
  5. Move the cooked pancake to a serving plate and repeat until all the batter is used up.

Make sure to cook the center through even if it looks like they’re starting to burn a little on the outside. Nothing is less appealing than raw chickpea flour. The thinner the pancakes are the easier it is to get an evenly cooked consistency.

Peanut Butter Buckeyes

Peanut Butter Buckeyes

Between Christmas shopping, studying, writing papers and taking exams I haven’t had much time to cook or make new recipes lately. The nice thing about having a living room full of Christmas lights, stockings and a tree is it makes it easy to fall back into the holiday spirit after a stressful day.

I made these buckeyes last night for myself and my roommates because who doesn’t love a chocolate and peanut butter nightcap? I have to admit that I’ve made recipes like this often enough that I’ve stopped measuring things as I go along. Really you can make this in any proportion as long as the dough comes out the right consistency. They aren’t the prettiest buckeyes but they’re taste makes up for their appearance.

Peanut Butter Buckeyes Yield

If you want to change the flavor slightly add a touch of vanilla or cinnamon.

Peanut Butter Buckeyes

Prep time: 20 minutes

Cook time: 0 minutes

Ingredients(Makes about 20 buckeyes):

  • 1 cup creamy peanut butter*
  • 6 Tablespoons butter, melted
  • 1 1/2 cups powdered sugar, sifted
  • 1 1/4 cups bittersweet chocolate chips OR 10oz bittersweet chocolate, chopped

*If you’re using no-stir peanut butter, melt it in the microwave briefly before mixing it with the other ingredients

Peanut Butter Buckeyes Naked

Method:

  1. In a large bowl mix together the peanut butter, butter and powdered sugar until it forms a dough that sticks to itself. If for some reason your dough is too thin, slowly add more powdered sugar until it’s workable.
  2. Roll the dough into 1-inch balls and place them on a non-stick surface.
  3. Put the peanut butter balls in the freezer to set.
  4. While the peanut butter balls are hardening, melt the chocolate in a microwave or over a double boiler.
  5. One by one dip the peanut butter balls into the melted chocolate to coat their outside and put them back on the non-stick surface.
  6. Refrigerate the peanut butter balls until the chocolate has set. Keep cold until ready to serve.

Gluten-Free Peanut Butter Cookie Recipes

I’m starting to get the impression that I’ll be craving cookies all December. They’re the perfect dessert to end a meal because they aren’t too decadent or messy but still delicious. I’m always drawn to peanut butter cookies; then again I’m drawn to peanut butter anything.

These are a few of my favorite peanut butter cookies I’ve made before that are tried and true. I’ll be doing a lot of baking over the holidays and I’m sure I’ll need one or a few of these recipes. I hope other people can enjoy them, too.

Dessert Cream Cheese Ball

Dessert Cream Cheese Ball

Most people who love cooking have their “signature recipes” that they get asked to make all the time. At the holidays my mom always makes a savory cream cheese ball with onion, green pepper, pineapple and walnuts. As good as that is, if you follow this blog you’ll know I’m much more into sweet than savory. What could really be better than sweet cream cheese?

Another thing that prompted me to make this was a bag of Food Should Taste Good chocolate tortillas and wondering what in the world you serve chocolate tortillas with. The crunchy and lightly-sweetened tortillas went perfectly with the smooth cream cheese and powdered sugar. I couldn’t imagine eating this any other way but I’m sure sliced apples or graham crackers would match well, too.

Dessert Cream Cheese Ball Nachos

I used honey glazed roasted pecans from Oh Nuts for the coating. If you don’t have pecans you can use any number of things as a coating. Try sliced almonds or crushed green and red M&Ms, or even holiday-themed sprinkles.

Dessert Cream Cheese Ball

Prep time: 10 minutes

Cook time: 0 minutes

Ingredients(Makes about 12 servings):

  • 1 8oz block cream cheese
  • 1/2 cup + 2 Tablespoons powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 1 Tablespoon half & half
  • pinch of salt
  • 1/2 cup glazed pecans, crushed

Method:

  1. In a large bowl, beat together the cream cheese, powdered sugar, vanilla, half & half and salt.
  2. Scrape the cream cheese mixture onto a sheet of clear plastic wrap. Form the cream cheese mixture into a ball using the wrap to cover your hands and keep it together. Stick the ball in the fridge for 20-30 minutes to set.
  3. Unwrap the cream cheese ball and coat it with the pecans, pressing them in lightly to make sure they stay.
  4. Transfer the cold cream cheese ball to a serving plate. Serve with chocolate nachos, graham crackers, or sliced fruit.

Homemade Chocolate Turtles {+ Giveaway}

Homemade Chocolate Turtles

Before Thanksgiving I was thinking of different recipes I could use the American Heritage Chocolate I received on. It’s hard to find old-fashioned recipes that are also gluten-free since I don’t think that was much of a concern in the 18th century. I remembered how much I like old fashioned candy shops and seeing the homemade candies behind a glass case and wanted to try making a favorite: turtles.

I can’t say I went all-out old-fashioned with this recipe because I cheated a little bit and bought wrapped caramels. Learning how to use a candy thermometer well is something I want to do; this didn’t seem like a good time to start practicing, though. Store-bought or not, the end result was delicious and that’s what really matters, right?

American Heritage Chocolate

Whenever you’re working with high-quality baking chocolate I would suggest melting it over the stove using the double boiler method. Boil water in a small pot and place a fitted bowl on top with the chocolate inside of it, moving the chocolate around to melt it evenly. Chop the chocolate into smaller portions to make it melt faster.

Homemade Chocolate Turtles

Prep time: 15 minutes

Cook time: 0 minutes

Ingredients(Makes 10 turtles)

*I used Trader Joe’s salted old fashioned caramels. Feel free to make your own from scratch if you’re experienced with a candy thermometer.

Homemade Chocolate Turtles Yield

Method:

  1. Lay the pecans out in clusters on a non-stick, greased surface.
  2. Spoon about a Tablespoon of the melted caramel on top of each pecan cluster.
  3. Over a double boiler, melt the chocolate until it is smooth and shiny.
  4. Spoon just enough chocolate on top of the the clusters to cover most of the caramel and pecans.
  5. Move the turtles into the refrigerator or freezer for 20 minutes to set the chocolate.
  6. Serve and store at room temperature.

Chewy Peanut Butter Cookies {Gluten-Free}

Chewy Peanut Butter Cookies {Gluten-Free}

I came home for the holiday weekend on Wednesday night last week. Normally I cook more for the holidays but by the time I arrived most of Thanksgiving dinner had already been planned. I decided to contribute some ad hoc cookies because, well, when are extra cookies ever a bad thing?

I’m usually a purist when it comes to peanut butter cookies using this recipe. However I wanted to try one with flour and butter for a different texture to mix things up. The added ingredients make a cookie that chewy rather than crispy and slightly richer. On top I added a chocolate drizzle for the chocolate lovers in my family(but mostly for myself).

Mixed some chopped peanuts or chocolate chips into the batter before baking these for an extra crunch.

Gluten-Free Banana Pancakes

It’s been getting harder and harder to get out of bed in the morning lately. I’m used to freezing temperatures in New England by now but I’ve never learned to like them and it’s only getting colder from here on out. Blankets are getting thicker, showers are getting longer, and breakfasts are getting tastier because they’re always the best reason to get out of bed.

These pancakes are an older recipe that I wanted to revisit and spend more time on. It’s hard to find good gluten-free pancakes and the more flavors you can get the better. They’re entirely naturally sweetened, too, until you pour the maple syrup on top which is a must. A little pat of cinnamon butter and it’d be heaven.

The recipe only makes about one serving. I would recommend doubling or tripling it and storing the extra pancakes in a Ziploc bag in the refrigerator to have extra for another morning.

Gluten-Free Banana Pancakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients(makes 1 serving):

  • 1/3 cup mashed banana(about a medium-sized banana)
  • 1/2 cup chickpea flour
  • 1 egg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4-1/3 cup water

Method:

  1. In a mixing bowl combine the mashed banana, chickpea flour, egg, cinnamon, baking soda and 1/4 cup water and mix.
  2. Add more water if necessary to get the consistency somewhere between thick-runny and runny.
  3. Preheat a non-stick pan over medium heat.
  4. Scoop about 1/4 cup batter into the pan for each pancake. Only cook 1 or 2 at a time to avoid overcrowding.
  5. Cook on one side until the top is bubbly, then flip and cook for about another minute. Repeat until all the batter is used.

Definitely worth waking up for.

Spiced Almond Butter Cookies

spiced almond butter cookies

I love almond butter. I like it even more than peanut butter most of the time. But I don’t buy it nearly as often because it’s over twice the price. That just isn’t fair, is it? These cookies were worth the splurge.

The nice thing about almond butter is that the flavor is simple and delicious. It’s easy to dress up and make fancier with extracts and spices. These taste incredibly like a gingersnap and have a very similar texture, too. It’s hard to believe the ingredients are so simple and naturally gluten-free.

If you don’t have pumpkin pie spice handy, just use about a teaspoon of cinnamon and 1/2 a teaspoon of nutmeg.

  2. In a bowl, mix together all of the ingredients until it forms a dough.
  3. Line a baking tray with a non-stick surface. Make the dough into 1-inch balls and place them on the tray, flattening them with a fork in a criss-cross pattern.
  4. Bake for 12-14 minutes until the edges begin to brown.
