In Case You’re Craving Peppermint, Too…

I didn’t cook much this weekend; I haven’t had the time. Most meals have been thrown together in 5 minutes or less and were far from blog-worthy. Who am I kidding? Most meals have been candy and Reese’s peanut butter trees because I’ve been stressed. I’m sure life will be back to normal once these last few finals are finished.

Even if I’m not feeling the holiday spirit right now, my taste buds definitely are; I’ve been craving peppermint in everything. I’ve pretty much been satisfying those cravings with peppermint extract in chocolate oatmeal and cheap mints from the store, but here are some recipes I’d make with peppermint in them if I had more time.

Year One

One year ago today I wrote the first blog post on this blog. To say it was a hasty decision would be an understatement. 2 days before I decided I was bored and tired of my old blog—that it just didn’t have the right direction or focus I wanted. In class I scribbled down on a piece of paper everything starting a new blog entails: A name, a design, a facebook page, business cards, even what I would change my twitter handle to. The next 48 hours I worked tirelessly making all of that a reality, buying the domain name and throwing together a header for a simple format, and starting writing.

After a year, not much has changed. And I’m glad about that. The header looks different, and my writing and photos(I hope) have both gotten better. But I still feel as passionate and determined on the focus of this blog as I did on day one. It’s made me try new things, as big as working at a restaurant for 3 months to little things like trying to make authentic macarons(which were a huge fail between you and me), and for all of that I am grateful.

I couldn’t think of a better way to celebrate one year than looking back at what are my 10 favorite recipes, the ones that I still go to bed thinking about and end up making time and time again. I wouldn’t be surprised if in another year these are still favorites of mine. Maybe looking at these you’ll find a favorite, too.

Honey Recipe Round-Up

Valentine’s Day is only 2 weeks away.

Scared you a little, didn’t I?

Valentine’s Day is full of expectations. If you’re in a relationship, you’re expected to do nice things for each other and be all lovey-dovey. If you’re not in a relationship, well, you’ve probably thrown your expectations out the window by February 14th and are ready with a pint of ice cream.

At the end of the day, nothing says “I love you” like “Here, eat all of this sugar and for this one day I won’t judge you,” so here are some suggestions for what sweet treats you can make to surprise your sweetheart.

These are a must for anyone who loves chocolate and peanut butter. And who doesn’t love chocolate and peanut butter? Well, unless your date’s allergic… And they’re even easier to make than peanut butter cups. I recommend using a small loaf pan so that the layers are nice and thick.

Peppermint Patties:

Peppermint patties are the perfect dessert for a date because they’re also a breath mint. These were surprisingly easy to make, too.

Coconut is one of those love or hate flavors. But if you know someone who loves it, then chances are they’ll love you for making these for them. They taste much fresher and lively than the ones you buy from the store.

Vegan Truffles:

This is probably the most tedious recipe but also the most impressive. Make your own truffles with pure chocolate, no refined sugar, and all fresh flavor. These are a must-eat for any true chocolate lover.

Espresso Bark:

If you think you’ll need a pick-me-up after dinner to stay awake, espresso bark is the perfect combination of chocolate and caffeine. Of course, if you want to spend your night making inappropriate jokes you could always make Nut Lovers Bark, because who doesn’t love salty nuts?

My 10 Favorite Recipes Of 2010

It’s the last day of 2010 and I for one am excited. A new year is the perfect time for new beginnings. And I get to see Kathy Griffin and Anderson Cooper joke around in Times Square tonight; what could be better?

Before the year is over, I wanted to look back at 10 recipes that shined through in 2010. Some of these I’ve made recently, but most of them I just remembered making this list and now want to go back and make again. Enjoy!

Microwave Vegan Chocolate Fudge. I think this is the most viewed recipe page, and an obvious candidate for this lift. I have some in my refrigerator right now. That won’t be true for long.

Chocolate Orange Brownies. I don’t know if this is the best brownie recipe out there, but it’s definitely one of the best flavor pairings there ever was. And it has fruit, so that means it’s healthy! Right?

Brown Sugar Garlic Tofu. This tofu is nothing but good. It’s definitely not the kind of dish for a first date; you’ll have garlic breath for weeks. But it’s worth it.

Vegan Tofu Burgers. In my frustrating search for a veggie burger without eggs or wheat, the clear winner at the end of the day was this homemade recipe. It’s just 6 simple ingredients and a great meal to keep around.

Peanut Butter Chocolate Chip Dessert Hummus. The new kid on the block, dessert hummus has stolen hearts with it’s sweet flavor and smooth texture. This combination of peanut butter and chocolate is a clear favorite.

The Best Quinoa Stuffing. It’s not called “The Best” for nothing. Even my 81-year old Italian great aunt liked it, and it’s hard to compete with her usual meal of Burger King and an orange shake.

Homemade Baked Beans. It’s true: Homemade just tastes better. These might take 10 hours to make but they’re completely worth it. The deep, rich molasses flavor just gets better and better.

Vegan Truffles. These are a bit much, but they are the ultimate chocolate lover’s experience. Even if you use the cheaper method, the chocolate still tastes rich and decadent and pure. Bookmark it for Valentine’s Day.

Hazelnut Cheesecake Frozen Yogurt. I couldn’t make this list without adding an ice cream since 2010 was when I first discovered the beauty of homemade ice cream. This is rich and satisfying and tastes just like the real dessert!.

My 10th spot is an honorable mention to chocolate midnight cake from Sweet Utopia. I feel like I’ve made this 2010 times; it’s so good and my go-to chocolate cake, vegan or not.

As much as I love trying new things, I can’t get past old favorites. If a dessert is easy to throw together, I’m especially likely to keep the ingredients now “just in case” I need a sweet treat fast.

I made another batch of Peanut Butter S’mores Bars one week after my first batch. I’m obsessed. These were to bring to a Christmas party yesterday, and they were just as good as the first time. I even got requests to make them for a family birthday party in January—fine by me, any excuse to whip up another batch.

I also made another batch of microwave vegan fudge after coming home last week and realizing we had 4 pounds of earth balance. I’d like to say these were for a party or even neighbors but nope! I just made them because I was bored and craving chocolate. Don’t pretend like you wouldn’t do the same.

And now with my sugar coma I’m in awe that Christmas is just 5 days I way. I have a good idea at what some of my gifts will be and one sounds “picture perfect”. I can’t wait!

Oh, and if you thought things couldn’t get more chocolaty, just wait until tomorrow…

Recent Food Obsessions

Now that Thanksgiving is more than a week passed, we can emerge from eating leftovers for breakfast, lunch, and dinner and start getting back to eating different foods over and over again. These are the ones I’m currently obsessed with.

Caitlin’s Perfect Baked Tofu. I discovered this recipe when I ran out of salt and wanted something flavorful. It’s so simple and tasty. Try it!

Lastly—but certainly not least—garnet yams. I never believed there was a big difference between different yams until trying these. Roasted at 400 for 2 hours, these are soft and sweet and smooth. I could even live off of these for 2 months.
