Vegan Tofu Burgers
Ingredients:
- 1 block extra-firm tofu
- 1/2 cup dry lentils
- 2 tablespoons ketchup
- 1 teaspoon mustard
- 1/2 teaspoon onion powder
- 1/4 cup ground flaxseed
Press and dry the tofu before working with it. Cook the lentils through, drain, and let them cool. In a food processor, combine all 6 ingredients. Process until the mixture is fully emulsified. Preheat the oven to 275. Separate the mixture into 5 equal-sized portions and press into patties on a lined baking sheet. Bake for 30 minutes on each side or until browned. Store in the refrigerator or freezer until ready to serve. Veggie burgers can be recooked on the grill, in a pan, or in the microwave.
