Autumn Stuffed Acorn Squash
Ingredients:

1 acorn squash, halved and scooped

1/2lb white meat ground chicken or turkey

1 bell pepper

1 medium onion

2 tablespoons olive oil

1/4 cup pumpkin puree

1/4 cup maple syrup, divided

1 teaspoon cinnamon

1/4 teaspoon salt
- extra seasoning(optional)
Preheat the oven to 375 degrees. Halve the acorn squash and add on 2 tablespoons maple syrup. Roast for 40 minutes or until tender.
Dice the onion and pepper and sweat in oil over a medium-high burner until browned. Add in the turkey meat, cinnamon, salt, and any extra seasoning if using and cook the meat through. Once the meat is cooked through, add the pumpkin and maple syrup and stir to combine. Scoop into the squash halves and serve.
