Hot Amaretto Mochas

I’ve gone through stages of coffee drinking. First was the “decaf black coffee is the way to go.” Then came the “I don’t drink coffee, just tea,”  followed by “I only drink coffee when my coworkers do.”

Now comes the “I’ll drink coffee when you put Bailey’s in it” time of year.

This drink is so easy it’s a little scary(scary that you can make it whenever you want, that is). Be sure to keep all the ingredients on hand for a dessert aperitif on Christmas day or for any holiday party and watch the pot of coffee disappear.

You can use any flavored liqueur instead of the amaretto, or even make a non-alcoholic version with coffee creamer and a splash of almond extract for the kiddos.

Hot Amaretto Mochas

Prep time: 5 minutes

Cook time: 0 minutes

Ingredients(Makes 1 serving):

  • 6oz fresh brewed coffee
  • 1 Tablespoon hot cocoa mix
  • 1 1/2oz Irish cream
  • 1/2oz amaretto

Method:

  1. Make sure the coffee you’re using is steaming hot. If not, heat it up gently.
  2. Stir in the hot cocoa mix until it’s completely dissolved.
  3. Pour in the Irish cream and almond liqueur and stir well until blended.
  4. Garnish with whipped cream and chocolate if desired. Serve hot.

Elderflower Cocktail

There’s a new favorite bottle in my liquor cabinet and it’s already half gone. Recently I was turned on to St. Elder and haven’t looked back since. The liqueur is very sweet with a natural citrus grapefruit flavor to it. It goes great with just about anything.

Using vodka, simple syrup, and orange juice highlights the St. Elder without overpowering or changing the flavor too much. It’s a great first introduction drink or drink to serve to old fans. Leave out the simple syrup for a less-sweet drink.

For some reason when I made these I was out of ice, so instead used frozen berries to cool the drink down. I think they also make the presentation better and pair well with the elderflower which tastes fruity on its own. Shake up the recipe by using a flavored vodka.

Ingredients(Makes 2 drinks):

  • 1 1/2 shots Elderflower liqueur
  • 2 shots vodka
  • 1 shot simple syrup
  • Juice of 1/2 an orange
  • Ice or frozen berries

Method:

  1. Combine all of the ingredients in a cocktail shaker.
  2. Shake until the drink is well mixed.
  3. Strain and pour into glasses with fresh ice or frozen fruit. Serve immediately.

Coconut Blue Hawaiian

Because one recipe with pineapple and rum in a week isn’t enough, I had to include this one, too.

Since I’m a fan of sweet drinks, I usually gravitate towards the tropical ones. Pineapple juice, cherries, and rum never fail to make a winner. There are a lot of ways to make a Blue Hawaiian but this is the one I’d swear by.

A lot of Blue Hawaiian recipes will have you use rum and vodka. But why use vodka when you could use more rum? And why use more rum when you could use coconut rum? It just all makes sense.

Coconut Blue Hawaiian Rum

I’d recommend using a clear rum to keep the flavor and appearance of this neutral. You could also substitute sweet and sour mix or even lemon juice in for the lime; just use what ever you have on hand.

Ingredients(Makes 2 servings):

  • 2 shots rum
  • 1 shot coconut rum
  • 2 shots Blue Curacao liqueur
  • 1/2 cup pineapple juice
  • Juice of a half a lime
  • Ice
  • Cherries for garnish

Method:

  1. Pour the rum, coconut rum, blue curacao, pineapple juice, lime juice and ice into a cocktail shaker and shake vigorously until mixed.
  2. Pour the drinks evenly into two glasses with fresh ice.
  3. Garnish with a cherry if desired and serve cold.

I can’t remember the last time I actually saw a sunrise. That might be a little embarrassing to admit; I’m definitely a night owl who enjoys sleeping in when I can. This, however, is a sunrise I can get behind.

Tequila sunrises are one of my favorite drinks. They’re simple(only 3 ingredients!), delicious, and you can tell yourself they’re healthy because they have juice in them instead of soda. They’re also just a lot of fun to look at; I never get tired of pouring these for myself and friends.

Tequila Sunrise Orange Juice

It’s hard to mess this one up. Just pour with a steady hand and be sure not to stir. If you want to ad a little twist, squeeze a lime wedge in with the tequila for each glass.

Ingredients(Makes 2 servings):

  • 3 shots white tequila
  • 1 cup orange juice
  • 2 Tablespoons grenadine
  • Ice(optional)

Method:

  1. Add 1 1/2 shots of tequila to 2 1-cup glasses. Add in ice as well if the ingredients aren’t chilled.
  2. Pour 1/2 cup of orange juice into each glass. Do not stir.
  3. Pour 1 Tablespoon of grenadine into each glass right through the center of the top. Do not stir but let it settle at the bottom and gradiate.
  4. Serve and drink cold.

This food blogger has unfortunately not done much cooking lately; I’ve been busy. I’m starting to get back into the swing of things after a lot of moving and unpacking and can finally get back into the kitchen.

A friend of mine has been looking for Summer drink recipes and it didn’t take much convincing for me to try something new. My last night in Providence we ate at a Thai restaurant and one of my friends took home a Thai iced tea. It was sweet, creamy and a little spicy—perfectly suited for a little bit of rum and something fairly easy to make at home.

Spiked Thai Iced Tea Brewing Tea

Like any drink recipe you should taste as you go along and add less or more to suit your palate. The amounts listed below are more or less suggestions. I tried this with Bacardi but I think it would be terrific with a coconut or similarly flavored rum.   

Spiked Thai Iced Tea

Prep time: 1 hour

Cook time: 10 minutes

Ingredients:

    • 5 black tea bags*
    • 3 1/2 cups water, divided
    • 1 cup sweetened condensed milk
    • 1/2 cup rum or coconut rum
    • Ice
    • Mint to garnish

*For a more authentic flavor used spiced Thai tea bags, which are black tea with anise, vanilla, and cardamom. They are available online and at some specialty stores.

Method:

  1. Bring 2 1/2 cups of water to a boil in a small pot.
  2. Remove the boiling water from the heat and add in the tea bags. Let the tea rest for 30 minute to an hour to cool down to room temperature.
  3. Remove the tea bags and add the remaining water.
  4. Fill 4 glasses 3/4 of the way up with ice.
  5. Pour a shot of rum into each of the glasses.
  6. Fill the glasses 3/4 of the way up with the tea.
  7. Add 1/4 cup of sweetened condensed milk to each glass and stir well.
  8. Garnish with mint if desired.

Winter is sadly not a great time for fresh fruit and vegetables in New England. When I go to the store I usually pick up all different kinds of frozen produce. Frozen fruit will unfortunately never taste as good as fresh when thawed and eaten but thankfully makes a delicious smoothie.

This is good to have in the morning if you’re in a rush to get out the door or even at night after dinner for something healthy and delicious. If you use a Greek style yogurt you can really pump up the protein in this drink.

Strawberry Chocolate Chip Smoothies Finished

If you use a flavored yogurt instead of plain you can skip the added sweetener altogether. Try using white chocolate chips for a different flavor.

  • 1/2 cup plain yogurt
  • 1 cup frozen strawberries
  • 1 cup milk
  • 1 Tablespoon agave nectar
  • 2 Tablespoons chocolate chips

Method:

  1. Combine the yogurt, strawberries, milk and agave nectar in a blender and blend until smooth.
  2. Add in the chocolate chips and pulse a few times until they’re broken into smaller pieces.
  3. Pour and serve immediately.

This is one of those moments where I have to eat my words.

I’m sure if you searched through all my tweets you’d find one about how I’d never, ever eat a smoothie with spinach in it. Well the joke’s on me because I’ve been having one or more of these a day for the past few weeks.

Once you get past the color that makes you think you’re drinking Kermit the Frog, you’d be surprised how good green smoothies can taste. And you know they’re better for you than whatever you can get at an Orange Julius in the mall.

If you do add chia seeds or protein powder then I would recommend adding more water so the mixture doesn’t thicken up too much. For an ice-cold smoothie, freeze the banana ahead of time.

Having a reliable blender has improved my eating habits in a lot of unexpected ways. I’ve started having more fruit smoothies and vegetable juices throughout the day. A lot of the time I enjoy them so much I forget they’re healthy.

By far my favorite is a chocolate peanut butter smoothie; I don’t think there’s any surprise there. It’s similar to having a Reese’s cup but you can have it everyday and still feel good. How does something like that even exist?

Peanut Butter Banana Breakfast Smoothie Cocoa

You can use milk, almond milk, or coconut milk in place of the water; however, I think this is deliciously creamy as is on account of the peanut butter. If you ever need to make peanut or almond milk in a jiffy, you can make it by blending ~1 Tablespoon of nut butter with a cup of water.

Whether it’s desserts or drinks, I’m always drawn to the sweetest ones. My favorite drink to order at restaurants growing up was always Shirley Temples. I couldn’t describe the flavor if I had to other than sugary; but really that was never a concern.

Even now I’m still drawn to that syrupy-sweet taste of grenadine. And I’ve come to learn it’s even better with a tart and salty contrast and some deeper flavor to it like amaretto.

This is drink is definitely on the sweet side. You can add a splash of seltzer to dilute the flavor slightly and add a carbonated twist to it or add a little vodka to make the drink stronger without changing the flavor too much.

Homemade Sweet & Sour Mix

The drink I always go through the fastest is sweet & sour mix. I’m a sucker for sours and my roommate loves margaritas so it’s a hot ticket in our refrigerator. We used to buy our mix from the liquor store until I realized how easy it is to make. With this recipe, you’ll never have to overpay for sweet & sour mix again.

At the heart of it, sweet & sour mix is just lemon juice, lime juice, water, and sugar. The basic ration is equal parts sugar water and citrus juice. You can always make it sweeter or more tart to fix your preference.

Homemade Sweet & Sour Mix Unstrained

This keeps for a while so it’s a great thing to make ahead of time and leave in your refrigerator for the right occasion. If you’re using this to make margaritas or a tropical drink, consider swapping in orange juice in place of the lemon juice.

Ingredients(Makes 2 cups):

  • 1 cup sugar
  • 1 cup water
  • 1/2 cup lime juice(from about 2 limes)
  • 1/2 cup lemon juice(from about 2 lemons)

Method:

  1. Combine the sugar and water in a pot and boil the water until the sugar has dissolved.
  2. Take the sugar water off the heat. Add in the lemon juice and lime juice.
  3. If you’re fresh-squeezing the lemons and limes, remove the pulp and seeds from the mix with a strainer.
  4. Store the sweet & sour mix in the refrigerator when not using. It will last for a couple weeks.
