Maple Almond Granola

Granola is quickly becoming one of my favorite foods. I’ve been eating it morning, noon, and night. It’s just a matter of time before I buy some oversized glasses and Toms and join a coop.

It’s so much more appealing to make your own because it gives you an endless possibility of flavors. You can have chocolate, banana, peanut granola one morning and maple almond granola the next. And since oats are cheap(well, unless you’re stuck buying name-brand certified gluten-free oats—but let’s not go there), it’s not a meal that’s going to bleed your pockets dry.

The hint of cinnamon in this recipe adds a familiar warmth that doesn’t overpower the other flavors. Make sure to use a tasteless oil like canola or safflower unless you’re looking to add the flavors of coconut or extra virgin olive oil into the mix.

Maple Almond Granola

Prep time: 5 minutes

Cook time: 35 minutes

Ingredients(Makes about 3 cups):

  • 2 1/2 cup oats*
  • 6 Tablespoons maple syrup
  • 2 Tablespoons neutral flavored oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/3 cup raisins
  • 1/4 cup + 2 Tablespoons shaved almonds

*Make sure these are certified gluten-free if you’re dealing with a gluten allergy.

Method:

  1. Preheat your oven to 325 degrees.
  2. In a large bowl, mix together the oats, maple syrup, oil, salt, and cinnamon.
  3. Lay the oats out in a 1/2-inch thick layer on a baking tray. Bake for 30-35 minutes until the oats are crispy and toasted, occasionally breaking the granola with a fork or other utensil while it bakes.
  4. Remove the granola from the oven and let it cool completely.
  5. In a separate bowl, combine the granola, raisins, and almonds and toss together until completely mixed.
  6. Store in an airtight container at room temperature.

You can toast the almonds for an extra level of nuttiness before adding them to the granola. I’d also suggest adding almond extract to the raw oats before baking for a kick of flavor but it’s not necessary.

I’ve never been particularly fond of granola until I had Love Grown Foods’ cocoa granola last Summer. I didn’t realize something could be so chocolaty and also healthy. Every time I’ve made granola myself in the past it never clumped; this recipe clumps. The banana chips and peanut butter naturally pair with the chocolate. It’s really a winner.

Want to make it a little more delicious? Add in 1/3 cup of chocolate chips after the granola has cooled. This recipe is also vegan as is but I didn’t want to call it that because I ate mine with a big bowl of cow’s milk yogurt.

Prep time: 5 minutes

Cook time: 25 minutes

Ingredients(Makes about 3 1/2 cups):

  • 2 1/2 cups quick-cooking oats*
  • 1/3 cup maple syrup
  • 2 Tablespoons oil
  • 1/4 cup cocoa powder
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup roasted peanuts
  • 1/2 cup banana chips, crushed

*To make this gluten-free make sure to use gluten-free oats.

Method:

  1. Preheat your oven to 350 degrees
  2. In a bowl, mix together the oats, maple syrup, oil, cocoa powder, vanilla extract, and salt thoroughly.
  3. Lay the oats out on baking tray and press down until the oats are about 1/2 an inch thick.
  4. Bake for 25 minutes, gently shaking the tray every 5 minutes or so.
  5. Remove from the oven and let the granola cool.
  6. Once cool, break the granola up and mix with the peanuts and banana chips. Store in a sealed container for up to a week.

I can’t understand people who eat granola with milk. Yogurt is granola’s best friend; you can’t break them up.

Almond Flour Banana Bread

The last time I was looking through my recipe pages, one thing really struck me: I had no recipe for gluten-free banana bread. I thought that couldn’t be. If that was the case, it meant I hadn’t made banana bread in over 2 years, which seemed ridiculous because I can still clearly remember how soft and sweet and spicy and moist good banana bread should taste.

Somehow that was true and I realized I really needed to get with the program. As soon as some bananas turned brown, I mashed them up and made them into banana bread. Even without the gluten, this bread holds its shape with each thick, dense, moist and chewy slice and the flavor has just the right amount of spice and sweetness.

While I think coconut flour could make a texture slightly similar to regular banana bread, I used only almond flour in this loaf because I know what a hassle it is to go out and have to buy 15 different kinds of flour. I used vegetable oil but melted coconut oil would add a great boost of flavor and be slightly more healthy.

Almond Flour Banana Bread

Prep time: 15 minutes

Cook time: 55 minutes

Ingredients(Makes 1 loaf):

  • 1 1/2 cups almond meal or almond flour
  • 4 eggs
  • 1/4 cup oil
  • 3/4 cup light or dark brown sugar
  • 3 medium bananas, mashed(about 3/4 cup banana puree)
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup walnuts(optional)
  • 1/2 cup chocolate chips(optional) 

Method:

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, mix together the almond flour, eggs, oil, sugar, mashed bananas, vanilla, cinnamon, nutmeg, baking powder, and salt until there are no clumps.
  3. Fold the walnuts, chocolate chips, or any other mix-ins you might want into the batter.
  4. Lightly grease a 5 x 10 or similar sized loaf pan and pour in the batter.
  5. Bake for 55 minutes or until a cake tester inserted in the center comes out clean.
  6. Remove from the oven and let cool completely before slicing.  

This is really great with butter, peanut butter, chocolate hazelnut spread, or even all on its own. You should keep it wrapped up in the refrigerator in between meals so it lasts longer.

Chickpea Flour Pancakes

I’ve been neglecting a lot lately.

Neglecting writing blog posts this week because I’ve been swamped with finals.

Neglecting eating healthy most of this semester because it’s easier to make excuses than roast vegetables.

Neglecting restarting the 30 day Shred workouts because I don’t like being yelled at through my own TV.

But most significantly I’ve been neglecting this pancake recipe. And that’s the biggest shame of all; no one should go pancake-less for months at a time. I usually eat oatmeal in the morning because that’s quick and I can make it in a microwave. But sometimes breakfast is worth making a fuss over and that’s when a reliable recipe like this comes in handy.

For the record, chickpea flour does not actually taste like chickpeas at all. It has a really neutral flavor to it. You can find chickpea flour in some specialty markets. The kind I used is by Bob’s Red Mill.

Chickpea Flour Pancakes

Prep time: 5 minutes

Cook time: 5 minutes

Ingredients(Makes 4 medium-sized pancakes):

  • 1/2 cup chickpea flour
  • 1 egg
  • 1/3 cup water
  • 1 (heaping) Tablespoon sugar
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • Butter or oil for greasing

Method:

  1. Whisk together the flour, water, egg, sugar, baking soda, and salt until all the clumps are gone from the batter.
  2. Heat a pan or skillet over a burner set to medium with some butter or oil.
  3. Scoop about 3 Tablespoons-1/4 cup of batter into the pan.
  4. Cook until the edges firm up and bubbles come through the batter. Flip and cook for another 15-20 seconds until the other side has set. Repeat until all the batter is used up.
  5. Serve while still hot with syrup, sauce, and/or butter.

Coconut Flour Breakfast Bake

I’ve really come around to loving coconut flour over the past few months. At first I made vanilla cupcakes, then chocolate ones; then at some point I realized I needed to learn to make something else with coconut flour besides cupcakes or else I’m going to be having a lot of dessert. Since coconut flour is so healthy, I thought why not make a breakfast with it?

2 Tablespoons of coconut flour have 6g of fiber and 3g of protein. That’s already more than most breakfast cereals. Combined with some eggs for extra protein, banana for sweetness(because the thought of starting my day with something savory makes me shudder), and nut butter for healthy fats it’s a really filling way to start the day. Besides, coconut and banana just belong together. And rum. But I’m not quite sure for breakfast.

I don’t actually bake these because I have a microwave that I love and use but if you were to bake these set the oven to 350 degrees and bake for 15 minutes or until the center has set.

Coconut Flour Breakfast Bake

Prep time: 5 minutes

Cook time: 3 minutes

Ingredients(For one serving):

  • 2 Tablespoons coconut flour
  • 2 or 3 eggs
  • 1 ripe banana, mashed
  • Pinch of salt
  • 1/2 teaspoon vanilla extract(optional)
  • 1/4 teaspoon lemon zest(optional)

Method:

  1. In a small bowl, mix together all of the ingredients you’re using into a smooth and even batter. If the batter is too thick, slowly add water until it’s mixable.
  2. Pour the batter into a 6oz or 8oz ramekin depending on the number of eggs you used.
  3. Microwave at high for 3 minutes.
  4. Remove from the microwave. Top with dried fruits, nuts, or nut butter. Enjoy hot or at room temperature.

With 3 eggs and 2 Tablespoons of peanut butter, this has about 30g of protein, 11g of fiber, and plenty of healthy fats to fill up and let you focus on other things throughout your morning.

Scrambled Tofu

I love eggs. I really do. I have no problem with eating them for every meal. And some days I do. But I also love this vegan version of scrambled eggs, which is just as easy if not easier to make and packs a punch of flavor.

“How do you get tofu to look so much like eggs?” you might think. Tofu is so versatile to begin with; you can get it to be almost any texture and appearance with a little effort. The trick to getting a yellow color is turmeric, which adds very little flavor but a nice eggy look.

Now, this doesn’t taste terribly much like scrambled eggs. In fact, it would be pretty bland if it weren’t for the garlic, onion, and salt. In addition to those, you could add any herbs or other seasonings you might like to enjoy scrambled eggs with; for instance, add some cayenne pepper for a bit of a kick.

Scrambled Tofu

Prep time: 5 minutes

Cook time: 10 minutes

Ingredients(for 2 servings):

  • 1 block firm or extra firm tofu
  • 1/2 Tablespoon olive oil
  • 3/4 teaspoon turmeric
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Method:

  1. Heat a pan over a burner set to medium.
  2. Mash the tofu with a fork to get it to a scrambled egg texture.
  3. Pour the tofu and all of the rest of the ingredients into the hot pan. Mix together to distribute the seasoning.
  4. Cook for 5-10 minutes until the tofu starts to brown and firm up.
  5. Serve hot with home fries or toast.

I actually like this more than eggs because it’s usually easier to clean the pan afterwards; if that isn’t a good enough reason to make it, I don’t know what is.

Healthy Breakfast Tortillas

Some things are almost so easy that they don’t really require a recipe. But I love these so you’re getting one.

My new favorite find at the grocery store is corn tortillas. Everyone and their mother has probably bought these before but I really never had noticed them until last weekend. They’re cheap(perfect for a college student), whole-grain, naturally gluten-free and vegan. That’s an all around win in my book.

So now I have these tortillas; but what to do with them? Well, I went the obvious route and stuffed them with piping hot scrambled eggs, a slightly spicy salsa, and cool, ripe avocado. Difficult? No. Delicious? Yes.

Make sure your avocado is ripe for this recipe. A ripe avocado makes all the difference. The skin should be a reddish brown and the flesh should give easily to pressure.

Healthy Breakfast Tortillas

Cook time: 10 minutes

Ingredients(Enough for 2 people):

  • 4 whole-grain corn tortillas(or whole-wheat if gluten isn’t an issue)
  • 8 medium eggs
  • 1/4 cup salsa
  • 1 large ripe avocado, sliced into thin wedges

Method:

  1. Heat up a frying pan over a burner set to medium-high heat.

  2. Crack and beat the eggs into a large bowl.
  3. Pour the scrambled eggs into a hot pan. Cook for about a minute scraping occasionally until most of the egg is cooked(leave it a little liquidy as the egg will continue to cook once it’s off the heat).
  4. Heat up the tortillas and stuff them each with a quarter of the scrambled eggs.
  5. Top with salsa and sliced avocado. Serve hot.

I found this salsa at Trader Joe’s also over the weekend. I was a little worried I wouldn’t like it since I usually go for really spicy salsas and this one advertises itself as having a medium heat. What it lacks for in spiciness it makes up for in tomato and chili flavor; it’s really good and the bottle is almost half gone. I can’t keep my tortillas out of it.

I’m glad so many people have liked and tried the hot banana breakfast quinoa recipe. In 2 weeks I don’t think I can count the number of times I’ve eaten that on just my hands. It’s too easy and too tasty not to get in a rut over.

One change I have tried is this pumpkin version of the same breakfast topped with creamy almond butter and crushed raw almonds for a crunchy chew. It’s just as healthy and quick and easy to make. The only difference I noted was that it rises and falls more in the microwave than the banana version, so be careful not to fill the bowl too much.

Cook time: 3 minutes

Ingredients(Makes one serving):

  • 1/3 cup cooked quinoa
  • 1/3 cup pumpkin puree
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pumpkin pie spice
  • 1 Tablespoon maple syrup(optional)
  • Nuts, nut butter, and dried fruit for topping

Method:

  1. Mix the pumpkin, quinoa, eggs, salt, spice, and sweetener if using in a small bowl.
  2. Pour into a ramekin or other microwave-safe bowl and microwave on high for 3 minutes until the center is cooked through.
  3. Remove from the microwave. The top will fall slightly. Top with nuts, nut butter, or dried fruit.

The pumpkin breakfast quinoa is slightly denser and less sweet than the banana version without the optional maple syrup. Personally I prefer the banana but this brings a nice seasonal twist to breakfast.

Pretty much as soon as I made Banana Breakfast Quinoa I knew I wanted to try a hot, cooked version of it. I really like eggs in the morning so adding them and cooking it in the microwave seemed to be the easiest way to make something tasty. What resulted is a warm, hearty breakfast reminiscent of banana bread that’s both delicious and filling.

This has quickly become my new favorite breakfast, one that I eat most days of the week. It doesn’t take more than 10 minutes to make start to finish so even on my busy mornings I have time to throw it together. And it’s filling and healthy, too. A bowl with 2 tablespoons of peanut butter clocks in at around 25 grams of protein and no added sugar.

Prep time: 5 minutes

Cook time: 3 minutes

Ingredients(For 1 serving):

  • 1 banana, mashed
  • 1/3 cup cooked quinoa
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • Nuts, nut butter, dried fruit, or sweetener for toppings

Method:

  1. Combine the mashed banana, quinoa, eggs, salt, and cinnamon together in a small bowl and mix thoroughly.
  2. Transfer the batter to a ramekin or other microwave-safe bowl, leaving a little room at the top to prevent overflow.
  3. Microwave on high for 3 minutes or until the center is cooked through and set.
  4. Top with nuts, dried fruit, and/or sweetener and eat hot.

The texture, as you can see, is soft and spongy almost like a baked bread pudding. You could also try baking it in the oven for 12-15 minutes which would result in a similar texture and flavor.

Almond Flour Pumpkin Bread

Christopher Columbus discovered America.

I discovered that you can make a moist and delicious pumpkin bread that’s gluten and grain-free. Not to belittle Mr. Columbus’ achievement, but I think that’s pretty damn good.

Maybe I’m just a little too excited because I wasn’t sure this could be done. A few hours before I pulled this loaf out of the oven, it was literally just a bunch of almonds and a whole pumpkin. Not pumpkin puree. Not almond meal. Just the raw ingredients.

After roasting + pureeing the pumpkin and grinding the almonds, I threw these ingredients together and hoped for the best. Luckily, the best is what I got. This pumpkin bread is sweet, soft, moist(I hate that word but it really is) and spicy. It’s one of the best pumpkin breads I’ve had ever; it just happens to be gluten-free.

Almond Flour Pumpkin Bread

Prep time: 10 minutes

Cook time: 75 minutes

Ingredients(Makes 1 loaf):

  • 2 cups almond flour
  • 3/4 cup brown sugar
  • 3/4 cup pumpkin puree
  • 4 eggs
  • 6 Tablespoons oil
  • 1/4 cup tapioca starch(or corn starch)
  • 1/4 cup water
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • pepitas to garnish(optional)

Method:

  1. Preheat your oven to 350 degrees.
  2. Add all of the ingredients except for the pepitas into a large bowl and mix until fully combined. Stir extra well to ensure there aren’t any clumps.
  3. Grease a medium-sized loaf pan and pour the batter in.
  4. Bake for 75 minutes or until the center is cooked through.
  5. Remove and let cool for an hour before removing from the pan.

On top I spread a little(or a lottle) ginger jam. Have you seen this stuff? It’s made by Ginger People; it’s basically crystallized ginger made into a jam, and it’s heaven. A little goes a long way, though, which is why that jar has lasted me almost 2 years. This would also be good with pumpkin butter, cream cheese, peanut butter, or plenty of other spreads.
