Simple Quinoa Stuffing
Ingredients:

1 cup quinoa, rinsed
- 1 large yellow onion, diced
- 1/4 cup soy sauce
- 2 tablespoons white vinegar
- 4 green bell peppers for stuffing(optional)
- 2 tablespoons parmesan or nutritional yeast(optional)
Cook the quinoa with the onion completely in a rice cooker or on a stove. Add in the soy sauce and white vinegar, fluff, and let stand over the heat for an additional 2 minutes or until the liquids are absorbed. Stuff in peppers or serve as a side. Top with parmesan or nutritional yeast for a “cheesy” flavor.
