Low-Fat Cornbread
Ingredients:
- 1 1/4 cup whole grain cornmeal
- 3/4 cup whole wheat flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup honey
- 1 egg
- 1 cup 2% milk
- 1/4 cup plain yogurt
- 2 tablespoons butter
Preheat your oven to 425 degrees. In a bowl, sift together the first 4 ingredients. Beat in the egg, milk, and ahoney. Add in the yogurt and butter and mix until blended. Move into an 8×8 baking pan and bake until browning on the outside(about 20 minutes).
I made this tonight to go with some soup and I subbed gluten free flour. The texture is wonderful, very light and fluffy. It is almost like cake, which I really like. I could see turning this into a birthday cake with some frosting. Very delicious.
