Peach Salsa

Peach Salsa

Ingredients:

  • 1 medium tomato, diced and drained
  • 2 ripe peaches, diced
  • 3 cloves garlic, diced
  • 1 jalapeno pepper, seeded and diced
  • 2 tablespoons green or red onion, diced
  • 1 teaspoon salt
  • 1/2 cup white vinegar
  • 1 tablespoon lime juice
  • 2 tablespoons sugar

Dice all the ingredients into small, bite-sized pieces. Add everything from the tomato to the salt in a large sealable container. Cover in vinegar and put this in the refrigerator for 8 hours or overnight.

After the salsa has sat, drain the vinegar from the salsa making sure not to lose any small pieces. Add the remnants to a food processor or blender with the lime juice and sugar and pulse a few times to your desired consistency.
