Raw Vegan Chocolate Fudge
Ingredients:
- 1 1/4 cup nuts or half the amount nut butter*
- 1/2 cup(80g) dates
- 1/4 cup cocoa powder
- 1/4 cup coconut oil
- 2 tablespoons agave nectar
In a food processor, process the dates until a smooth paste. Remove and process the nuts until a coarse and crumbly texture. Finally, add all the ingredients back into the food processor and blend until incorporated. Once the mixture is emulsified, pour into a container and remix by hand if the coconut oil separates(it should be liquid by this point). Freeze and cut. Makes about 6-10 servings.
*You can mix it up and use your own blend to alter the flavor. Cashews have a nice, neutral flavor whereas others add their own touch. I like 3/4 cup cashews with 1/4 cup hemp seeds and walnuts
